Paul's Jam Recipe

Making jam is much easier than you might think. There is nothing better than fresh homemade jam on pikelets, scones or a fresh piece of bread. It can also make a great gift. Follow my easy recipe and enjoy the results.

Ingredients

  • 1.5 kg frozen or fresh Blackberry, Boysenberry, Raspberry, Tayberry, Loganberry, Ranui Berry or mixed berry jam
  • 1.5kg sugar
  • Sterilised jars and lids

Steps

  1. Place six medium jars in oven at 100 degrees
  2. Place six lids in a bowl.
  3. Boil jug and pour over lids so they are covered
  4. On a low heat soften the berries. Once softened turn heat up so that the berries are boiling. Add sugar. Stir. Bring back to the boil and boil aggressively for 15 mins stirring occasionally.
  5. Test jam is set by placing a tablespoon on a saucer and put it in the fridge. Have the saucer in the fridge so it is cold. When a skin forms it is set. Takes about 2 mins. When you tilt the saucer the jam should wrinkle.
  6. While doing the set test take pot off the heat. If not set, put back on the heat for another 5 mins boiling then re-test.
  7. When jam is set put it into the jars. I use a small jug and a saucer to stop the jug dripping jam everywhere. Put lids on firmly. Leave to cool. Label once cool. Makes great gift.
